A Very Special Seed
Pumpkin seeds come in one of two basic types; hulled and hull-less. At Hip Foods we mostly use the hull-less variety. All pumpkin seeds are nutritional powerhouses.
The hull-less or ‘green’ pumpkin seed comes from
a specific variety of pumpkin that produces seeds without the thick white seed-hull covering with which most Americans have become familiar when we once a year carve jack-o-lanterns. The Styrian pumpkin was developed in the region of Steiermark in Austria. A happy mutation to a single plant occurred in some field or garden several hundred years ago, and was discovered, recognized as valuable, and preserved by farmers there. What evolutionary cost there might have been in the wild to having such a mutation we don’t know, but having hull-less seeds and human caretakers was a match made in heaven for this gene line.
Pumpkin seeds have several outstanding nutritional benefits. The amount found in one Savor Tooth tortilla or two slices of Freekin’ Seedy bread or one quarter of a Pumpkin Seed Bar contains half the RDA of magnesium, a vital mineral in which over three quarters of Americans are deficient. Pumpkin seeds are noticeably rich in zinc, a mineral that scientists tell us is required in chemical pathways that provide disease immunity, healthy cell growth and division, and proper insulin regulation. Pumpkin seeds are rich in plant-based Omega-3 fats (alpha-linolenic acid or ‘ALA’). Pumpkin has been picked out as an important component of men’s diets specifically; this is partially due to the high zinc content (which is important for prostate health) and also because pumpkin seed extracts and oils may play a role in treating benign prostatic hyperplasia (BPH, or enlarged prostate).
